We have just finished building the dam to one of ponds. I plan on planting Bermuda this summer around the pond and on the dam that will be obviously a few months down the road I was going to cover the top and back with Mesh due to the heavy rains we get here in Georgia does this sound like a good idea or should I use something else

Good idea. You could throw down some rye seed before putting down the erosion matting. It'll grow up through the matting. Put staples down every yard or there's a good possibility that the wind will blow the fabric around on ya.
