Some eat them, some don't.
Frankly, I don't even like touching them.

We have so many that we toss them, but they are good to eat. When we have time to clean them and when we catch some of the larger ones, we fillet and prepare them the same as CCs.
I'd still rather not have any in the ponds, though...

Just Curious, What problems do bullheads cause? I don't have any in my pond and I have always been told that they are trouble but no one ever explained why.
Sgt911 do you know how the bullheads got into your pond?

I don't know of any real bad problems that they cause. Somehow they escape the predation that channel cats go through and they can disrupt spawning. However, everything disrupts spawning.
It's not about the fish. It's about the pond. Take care of the pond and the fish will be fine. PB subscriber since before it was in color.

I've got alot of them in ours. We have caught over 200 hundred in the last year and a half and still feel like we haven't dented them yet. The problems they cause for me is that they eat forage intended for other species. They are prolific predators. We have caught 1 pound bullheads by using 4 inch bluegill! They also sometimes eat pellets.
Once they get established they are very difficult to get rid of.

I think bullheads 8"+ out of a pond taste pretty good. I prefer to skin them, fillet them and fry them like I do BG or yellow perch. The ones that I raise are very good tasting and mild or very little flavor. An off flavor of ones raised in a pond means they came from water that had an offensive flavored algae bloom. I prefer to harvest bullheads for eating in the spring or fall.
